Poor Man’s Roast

A super delicious meal that is both inexpensive and easy to make, “poor man’s roast” is a clear winner. This tasty option takes typical foods such as ground beef, potatoes, and carrots and puts them together to create a meal you simply won’t believe.

To make poor man’s roast, simply place a quarter-pound of ground beef along with a sliced carrot and a diced potato onto a piece of foil. Season everything with seasoned salt, wrap the foil into a handy little packet, and place the entire thing in the hot coals of a dying fire until the beef is cooked through and the potatoes are tender. This typically takes around 40 minutes.

If you wish to make these packets even more interesting, consider adding onions, green beans, or any other veggies that suit your fancy to the mix.

Camping Mac and Cheese

Everybody loves macaroni and cheese. It’s a simple, inexpensive, and tasty comfort food that brings back childhood memories for some and creates new ones for others. Luckily, you don’t need to give up this classic favorite while camping. In fact, camping may even give you an opportunity to create this improved campfire version of the stuff.

Begin before your trip by cooking an entire 7-ounce package of macaroni. Let cool completely, then stir in ⅓ cup of cream, ½ cup of Gouda, 1 cup of shredded cheddar, 1 cup of shredded Parmesan, and 3 tablespoons of cold, cubed butter. Spray an aluminum baking pan with non-stick cooking spray and transfer the noodle mixture to the pan. Top with aluminum foil and store in the fridge.

When it comes time to prepare your campfire meal, simply place the entire pan on the hot coals of a dying fire until the cheese is melted, or for about 15 minutes.

Foil-Wrapped Quesadillas

Quesadillas are the ultimate easy food. They’re filling and super easy to make while still being delicious. Most people make quesadillas on a stovetop, and you certainly can do that while camping if you have your RV with you. However, they’re even better when made in the hot coals of the campfire.

To make these campfire pockets of goodness, you’ll want to fill flour tortillas with your favorite fillings. Some people prefer to stick to just cheese, while others like to throw chicken, beef, and/or veggies into the mix.

Once your tortillas are filled, wrap each one in two layers of foil, making sure to fold the edges of the foil over to create a protective little packet. Place all of the packets directly into the hot coals left from a fire, allowing the cheese to melt and the tortilla to brown slightly.

To make your quesadilla meal extra interesting, be sure to bring along salsa, hot sauce, sour cream, or anything else you might enjoy dipping your creation into.

Frito Chili Pie

A super fun food and an excellent excuse to eat chips, Frito chili pie is a campfire food everyone can enjoy. This meal is served up in chip bags, so you won’t have dishes to wash after dinner, and because you make your chili ahead of time—or simply use a canned version—it is beyond easy to prepare while relaxing around a campfire.

To prep for this meal, make a batch of chili before you ever leave home. Alternatively, you could purchase good canned chili to make things easy on yourself. When it comes time to eat, break open a small bag of Fritos for each person in your group. Top each bag with a spoonful of chili. From there, each person can top their “pie” with cheese, sour cream, olives, and any other toppings you offer.

Pizza Grilled Cheese

What’s better than a grilled cheese sandwich? A pizza grilled cheese sandwich, of course!

Anyone who loves pizza will love these sandwiches and making them in the sandwich iron over a blazing fire just makes them even more fun and delicious. Best of all, you can customize these delicious sandwiches to suit your tastes, meaning nobody will be complaining when dinner time rolls around.

To make pizza grilled cheese, butter one piece of bread and place it in one side of your sandwich iron. Add slices of mozzarella cheese on top of the bread slice, spread a small amount of pizza sauce on top of the cheese, and add any additional toppings such as pepperoni, sausage, and veggies. Add more cheese if desired before topping it all off with another slice of buttered bread and closing the iron. Hold the iron over a campfire until the cheese is melted and the bread is browned.

As you can see, there are tons of awesome meals you can make quickly and easily around a campfire. Go ahead and throw those hot dogs into your shopping basket, because no camping trip is complete without them, but add some other stuff as well! You might just find your new favorite camping meal and you can spread out those hot dog dinners a bit to make them more enjoyable.
