RV Eats: Easy Holiday Treats
Even those with a "Bah-Humbug" approach to the holidays usually enjoy the delectable treats that make an appearance this time of the year. Making Christmas goodies is one of the ways many people choose to get into the holiday spirit, as it's often accompanied by baked and buttered applelistening to seasonal songs and sharing with friends and neighbors. Living in—or traveling in—an RV doesn't have to prohibit this type of activity. Even with the limited kitchen space and minuscule oven, there are several easy options that can brighten the moods of even the gloomiest folks in the RV park.

Baked and Buttered Apple

Start by washing and coring 6 apples (We prefer Granny Smith, but we understand they're not for everyone.) ¾-of the way down, leaving the bottoms intact. With 2-TBSP of butter, combine ¼-cup brown sugar, ¼-cup chopped walnuts, 4-tsp cinnamon, and 1-tsp nutmeg. Fill each apple with the sugary mixture and place them in a crockpot. Pour ½-cup apple cider or apple cider vinegar (diluted to 50% with water) around the apples. Then, cook on a high setting for 2 ½ to 3 hours. Serve warm alone or with a scoop of vanilla ice cream. When refrigerated in an airtight container, this treat lasts for about three days.

Candy Cane Candies
Begin by melting two 12-ounce packages of chocolate chips in a bowl over a pot of boiling water. Place wax paper on a flat surface like cookie sheets or the counter. Dip Ritz crackers (or even Saltines, both work well) into the melted chocolate and place on the wax paper to dry. Then, melt one 12-ounce packages of white chocolate chips in a bowl over a pot of boiling water. Stir in 10 crushed candy canes and 1-tsp of peppermint extract (or ½-tsp food-grade peppermint oil). Drizzle white chocolate mixture over the chocolate-covered crackers. Sprinkle two more crushed candy canes over the candies. Keep refrigerated until you're ready to serve.
No-Bake Berry Parfait

For purists, whip 2/3-cup of heavy whipping cream to stiffness, add 1-TBSP raw sugar, and refrigerate for about 10 minutes. Everyone else can start with 1 1/3-cup of Cool Whip. Then, mix in 2/3-cup of vanilla yogurt and a bit of lemon zest. Combine 1-cup of blueberries and 1-cup of raspberries. In 4 wine glasses, evenly layer with half of the berry mixture, and then layer half of the cream. Follow that by layering the rest of the berries and then the rest of the cream. Add a couple of berries and maybe a mint leaf for garnishment before serving.

No-Bake Raspberry Oreo Cheesecake Parfait

In a medium pan, bring to 1-cup raspberries, 1 ½-tbsp sugar, and 2-tbsp water to boil over high heat. Then reduce the heat and let it simmer until it thickens. Meanwhile, in a small bowl, mix 8-ounces of light or fat free cream cheese, 1-cup low fat Greek yogurt, ¼-cup sugar, ½-tsp vanilla extract, and 1-tsp lemon juice. In 4 wine glasses, evenly layer ½-cup of crushed Oreos, and then add half of the yogurt mixture, and half of the sauce. Then, repeat with another ½-cup of Oreos, yogurt, and raspberry sauce. Top with a few fresh raspberries and chill before serving.

In Conclusion

A couple of these are great Christmas brunch options, or semi-healthy desserts. The others are great to keep on hand as treats for unexpected carolers or guests. They're also a perfect choice to take to a campground-wide get-together or to assemble holiday plates for your neighbors. Have a happy, safe, and peaceful holiday season!
