Filling Breakfasts on the Go

When you’re traveling in an RV, some days are just going to be hectic. Whether you’re rushing out the door to see an anticipated attraction or in a hurry to leave the campground by checkout time, sometimes there just isn’t time to enjoy a leisurely breakfast. On these days, you need something that is quick, healthy, and filling—and that can be hard to come by.

Fortunately, there are some options. The breakfast choices below meet all of these criteria, and most can be made in advance, meaning you aren’t trying to assemble food as you walk out the door. Better yet, none of these foods requires microwaving, so using these as grab-and-go meals while boondocking is completely possible.

Overnight Oats

Overnight oats are super simple to prepare the night before you need them. Because they’re customizable, you can make sure everyone in the family has what they like. Best of all, they are super healthy and leave you feeling energized and ready to start the day.

Apple Sandwiches

This is the only meal on this list that is better when made just before eating. That said, these sandwiches are super easy to make, and well worth the few extra minutes of work. Simply core an apple, cut it into quarter-inch slices horizontally, spread peanut butter, sunflower butter, or almond butter on one slice, sprinkle with granola, top with another slice, and you’re ready to roll with a protein-heavy breakfast.

Be sure to use the other slices to make additional sandwiches for the rest of the family before the apples begin to brown!

Sausage and Eggs

Yes, you did read that right, and yes, you can have sausage and eggs on the go. Simply hard boil some eggs the night before your outing or travel day—I recommend doing this in the Instant Pot if you have one—and cook up some sausage patties over the stove. Stick it all in the fridge and enjoy cold the next day as you drive to your next adventure.

Egg Muffins

While egg muffins can be eaten cold, I recommend sticking them in the microwave for a few seconds if you have the electricity to do so. These tasty little morsels have tons of protein, meaning you’ll feel full for hours after eating them. Even better, they taste absolutely amazing, and can include any and all of your favorite breakfast meats and veggies. Yum!

Yogurt Parfaits

This quick breakfast option is a little bit messy, so it may not be the best option for kids if you’re going to be eating in the car. Still, it is delicious, simple, and super healthy, so maybe you’d be willing to overlook the mess.

Yogurt parfaits can be made in advance if you like, and can include as much fresh fruit and granola as you like. Try this recipe the next time you’re in the mood for a parfait.
