Cinco de Mayo on the Road

Cinco de Mayo is right around the corner and it is time to let the celebration begin. The Hispanic holiday has become a favorite celebration all over the country. Who doesn’t love a good celebratory enchilada and Corona fest? Or maybe tacos and tequila are more your taste. Either way get out the blender and salt or let the margarita making begin. Here are some quick an easy Mexican dishes (and drinks) you can serve at your Cinco de Mayo gathering that have been tweaked a bit to fit the RV lifestyle.
Tacos, Tacos, Tacos
If you love tacos as much as I do but have limited space for cooking, chicken tacos can be easily prepared with your Crockpot. Simply add chicken breasts, salsa, and taco seasoning to the Crockpot. Be sure to use defrosted chicken; if possible I feel it gives off more flavor than frozen chicken and it cooks quicker. Then warm your tortillas and serve with lettuce, tomato, sour cream, salsa, and cheese. You can also make a quick fish taco by cooking fish fillet pieces as directed and wrap them in a fried corn tortilla.
Mambo Margaritas
If you like margaritas, I suggest using my family’s secret recipe. It doesn’t even require a blender which is helpful when conserving space in your RV’s cupboards. You would add one can of frozen limeade into a glass or plastic pitcher. Allow it to melt a little. Meanwhile, fill up limeade container with tequila and add to pitcher. I suggest using silver tequila instead of gold. Next stir in your favorite Mexican beer, I like to use Corona Lite. Stir mixture while also adding an ice cold Diet 7-Up. Chill and serve over ice in your fanciest plastic margarita glasses. These are sure to put you in a festive mood.
Enchilada Special
There is nothing better than a great chicken enchilada. I also really enjoy cheese or beef…ok, ok I guess just love enchiladas! What I don’t love is making them and when cooking in a small RV kitchen, I really don’t like it. I found an easy way to make enchiladas without the hassle of rolling each piece. Simply make the same chicken mixture as you did for the tacos. Next, you will need to put a layer of enchilada sauce on the bottom of the pan. The next four layers are repeated until you reach the top of your baking pan: tortillas, chicken (you can use cheese or beef too), enchilada sauce, and then cheese. You can add other sour cream and black olives if you like. Bake for 25 minutes at 350 degrees or warm in microwave until warm and cheese is melted. They are quick to make and very good to eat.
As Cinco de Mayo gets underway, you do not have to miss out on your favorite Mexican specialties. Just plan ahead and make some adjustments for a smaller kitchen space and you’re as good as gold. Cinco de Mayo celebrations are often held in campgrounds around the country.
