Cabbage and Thai Fried Rice Recipe

If you’ve never been to a Trader Joe’s, prepare to be amazed. Trader Joe’s is our favorite stop, next to Costco, all over the country. If there isn’t a Trader Joe’s near you yet there will be. The company keeps expanding into more stores in more states, all of them swamped all the time.
Here's a list of Trader Joe's stores across the country.
These folks have such a great selection of low-priced, high-quality items on their shelves, it’s hard to think of even one competitor. Each item appears to have been lovingly selected for its chart-topping goodness and reasonable price. Their hand-picked wine and beer selection makes shopping anywhere else for libations unnecessary. As if that wasn’t enough of an enticement (no, they’re not paying me to say this) there is the Trader Joe's lesson for corporate America -- they pay a living wage and still make money. You can see that in the faces of their always-helpful and cheerful staff wherever you go.
We have a list of staples that we always buy at Trader Joe’s, which make the basis for some great, quick meals. Today I’ll share with you the incredibly flavorful and healthful dish we whip up with TJ’s “Spicy Thai Shrimp Fried Rice.” I hope they never stop stocking this frozen bag of goodness. Everything in my “Trader Joe’s Doctor” recipe is made in a single large wok but any large frying pan will do. Takes about 20 minutes from prep to table. Serve it with a little Asian beer like Tsing Tao or Sapporo if you like!
Trader Joe’s Doctor: Cabbage Thai Fried Rice
Serves 3

In a hot wok or deep nonstick skillet lightly coated with oil, cook the eggs undisturbed into a pancake shape. When solid, slide out into a large bowl and cut into small squares. Everything else will go into this bowl as it’s done.
In the same wok, stir fry ginger and garlic til fragrant, add cole slaw mix and stir fry til slightly softened. Add to bowl with eggs.
If using more shrimp, stir fry now until done and remove to bowl of eggs.
Stir-fry Trader Joes Spicy Shrimp Thai Fried Rice mix til hot and steaming.
Now add the bowl of eggs, cabbage and shrimp to the wok along with the hot Spicy Shrimp Fried Rice, gently folding it together until all is steaming again.
Scatter scallions and cilantro into the mixture.
To serve, let people fill their bowl and add their own spoonful of lime/fish sauce and peanuts to taste.

Trader Joe’s Doctor: Cabbage Thai Fried Rice
Serves 3
Ingredients

- 1 bag Trader Joe's Spicy Thai Shrimp Fried Rice
- 8 oz shredded cabbage (cole slaw mix)
- 2 eggs, beaten
- 3 cloves garlic, peeled and chopped fine
- 1 inch of ginger root, peeled and chopped fine (shave off skin with the edge of a spoon, shred with the tines of a fork)
- 3 scallions, thinly sliced
- 1/2 pound of shrimp, raw (optional)
- Chopped cilantro (stems removed)
- Safflower, vegetable or or peanut oil
- 1/4 cup Fish Sauce (specialty item in the Asian aisle of grocery stores) and
- Juice of one large lime, combined
- Couple of handfuls of crushed peanuts (put peanuts in plastic zip lock bag and gently hit them with the handle of a cleaver or a hammer til they are crushed but not powdery)
