Awesome RV Eats: Cuppa Cuppa Cuppa Blackberry Cobbler

On my weekly farmer’s market prowl I scored a major deal on a bunch of blackberries – probably the last of the season. As I sat on my sofa staring at the literal bucket of blackberries I realized that I needed to come up with some ways to use them.

Of course I ate a lot – A LOT. Then it hit me. Cobbler.
Being from the south, cobbler is a mainstay. I have toyed with it before but I could take it or leave it (I know, I know, somewhere there are some little old ladies having a meeting about taking away my southern card). I guess it just never impressed me.

However, with my mountain of blackberries before me I knew I had to do something. I poked around on the internet for a bit, looking for recipes. A few looked OK but nothing really stellar.

This was about the time my husband wandered in from outside. “What are you going to do with all those blackberries?” he asked, a hint of fear in his eyes. He’d already eaten a fair amount himself. In short, we were both pretty sick of blackberries.

It was then that I decided to just do it, to take the plunge. I closed my laptop, took a deep breath, and dove right in. My goal was to come up with something simple, a little different, and with texture.

The batter was easy; it is pretty standard. Achieving texture was the part I couldn’t figure out. The fruit would be soft, the cake part would be soft – and I wasn’t going to put nuts or anything in it. That would just be wrong on so many levels.

The sugar. I could create a sugar crust on top! I cannot express to you the satisfaction I felt when I tapped my spoon on the top of my cobbler and cracked it that first time. When I took a bite – pure bliss.

So I made two.

Our neighbors were sitting outside so I carried over one, still warm from the oven. They were thrilled.

So here is my recipe. It’s an original. It will make one fairly large cobbler in a regular baking pan or two smaller ones. It’s easy to make in a tiny RV kitchen and I have to say, it’s pretty awesome.

Cuppa Cuppa Cuppa Blackberry Cobbler
2.5 Cups Blackberries
¼ Cup Sugar
1 Cup Sugar
1 Cup Self-Rising Flour
1 Cup Milk
1 Stick Butter, Melted
1 Teaspoon Vanilla
Preheat oven to 350 degrees. Butter a baking dish.
Rinse the blackberries.
In a medium bowl combine the blackberries and ¼ cup of sugar. Set aside.
In a large bowl combine the cup sugar and cup flour. Whisk in the cup milk until smooth.
Stir in the melted butter and vanilla.
Pour the batter into the buttered baking dish.
Add the sugared blackberries so that they are spaced a little through the batter. Sprinkle some sugar over the top.
Bake at 350 for 50 minutes.
Sprinkle top with sugar again and cook an additional 10 minutes.
Ovens may vary so you may need to cook a little longer. You want to top to be golden. The sugar on the top will give it a nice crispness.
Serve with some whipped cream, a scoop of vanilla ice cream, or let it stand on its own.
